Deconstructed  Blueberry Cheese Cake

Ingredients

  • 150g Cream Cheese 
  • 60g Tennis Biscuits 
  • 50g Blueberries 
  • 30g Sugar 
  • 20g Lemon Segments 
  • 20g Sugar 
  • 20ml Water 
  • 15g Butter 
  • 10g Lemon Zest 
  • 5ml Lemon Juice 
  • 5ml Lemon Juice 
  • 2 Star Anise
  • 1 Cinnamon Sticks 

 

Method

  1. Mix Cream Cheese in a bowl with lemon zest and lemon juice
  2. In a warm saucepan heat up the blueberries along with the cinnamon stick, star anise, sugar and lemon juice. Simmer on low heat till mixture thickens to a jelly stage or till all the liquid has thickened.
  3. In another saucepan do the same procedure as the blueberries as this will be your preserve.
  4. Using a fork or fingertips crush the biscuits in a bowl and work in the butter till it forms a crumble.
  5. Once all this is done you can plate it up however you choose or you can even layer it in a glass laying the biscuit down 1st then the cream cheese mixture followed by the blueberries and lemon preserve……Serve to friends and family.
